Professional ham knife with cross-handled handle
Traditionally riveted and fitted with two high-quality plastic handle scales, the Professional series features knives with above-average cutting performance. The all-purpose knife with a blade length of 15 cm is designed to assist with all types of kitchen tasks and therefore has a narrow blade shape. Ultimately, however, this kitchen knife is an all-rounder that, thanks to its length, is often used for many cutting tasks.
- Over 40 steps–from forging to hardening, grinding, and assembly – go into making our traditional forged quality knives.
- Forged blade–Each blade is forged from a single piece of chrome-molybdenum-vanadium steel while red-hot and then hardened to approximately 58° Rockwell.
- Long-lasting sharpness–The blades are sharpened on a ceramic disc at an angle of 14° on each side. This results in extreme sharpness and high cutting performance along the entire length of the blade.
- Perfect balance–The so-called bolster ensures the optimal balance of our professional knives and prevents the hand from slipping onto the blade.
